      The article features Ernest Byfield, hotel keeper in Chicago, Illinois. He has written articles that appeared in publications including "Variety" and the "Encyclopedia Britannica." In some of his prose about American gourmet, he argued that regular U.S. citizen can never be a gourmet. It relates how Byfield has entered into hotel business.
