Ingredients

2 Tbsp.  butter

1 Tbsp.  olive oil

1 small zucchini, diced

1/2 cup frozen peas

1/2 bell pepper (any color)

5 oz. cherry tomatoes, cut in half

1 small carrot, ribboned (use a vegetable peeler for the ribbons)

3 cloves garlic, minced

1 tsp. fresh lemon juice

A dash of Italian seasoning

1 Tbsp.  fresh basil, torn or sliced

1/2 cup fresh grated parmesan cheese

8 oz.  pasta, any variety

Salt and pepper to taste

 

Instructions

1)  Prep the vegetables and cook the pasta according to the directions on the package.  Add the butter and oil to a skillet over medium-high heat.

2) Add the vegetables and garlic to the pan and sauté for around 5 minutes until the vegetables are tender and crisp.

3) Stir in lemon juice, Italian seasoning, and basil.

4) Add a tablespoon or two of the pasta water to the skillet before draining the pasta.  Add pasta to the skillet and toss.  Just before serving, add the parmesan cheese.  Season with salt and pepper.
